Food for Thought: Frozen Key Lime Pie


I am going to try to post one recipe each week as a blogging resolution...I recently rented a cookbook from the great public library and found a bunch of easy, quick, and delicious recipes. Robin Miller's Robin to the Rescue. This week I have made four recipes, and Trace also made one - thumbs up on all of them. So, for my love of desserts, and since this makes me think of warmer days - here is Robin's Frozen Key Lime Pie


Ingredients:


Prepared graham cracker crust, 9" (I used shortbread)

8 oz container Cool Whip, slightly thawed

One can sweetened condensed milk

1/2 cup fresh lime juice (does not have to be key limes)

Lime Zest


Mix cool whip, sweetened condensed milk, and lime juice well. Pour into prepared crust. Place in freezer for at least 30 minutes. Top with lime zest and serve.


This was super easy and very yummy.
