Winter on the Farm



Old man winter is visiting this week..It is cold, misty, and soon to be icy.



The cows have yet to enter their safe-haven of the barn. Their coats are starting to get icy...Virgil is not too fazed by the weather just yet. Wyatt, on the other hand, refused to go outside even after I oput his coat on.




Nathan is warm and toasty!

Food for Thought: Frozen Key Lime Pie


I am going to try to post one recipe each week as a blogging resolution...I recently rented a cookbook from the great public library and found a bunch of easy, quick, and delicious recipes. Robin Miller's Robin to the Rescue. This week I have made four recipes, and Trace also made one - thumbs up on all of them. So, for my love of desserts, and since this makes me think of warmer days - here is Robin's Frozen Key Lime Pie


Ingredients:


Prepared graham cracker crust, 9" (I used shortbread)

8 oz container Cool Whip, slightly thawed

One can sweetened condensed milk

1/2 cup fresh lime juice (does not have to be key limes)

Lime Zest


Mix cool whip, sweetened condensed milk, and lime juice well. Pour into prepared crust. Place in freezer for at least 30 minutes. Top with lime zest and serve.


This was super easy and very yummy.

Two Months

This should have been posted last week, but being a working mom is HARD!! And I do not even work full time - hats off to all working parents, like my SIL, Amy.
Nathan is now two months old, and doing great. He has adjusted well to his babysitters (he's only been two days). I think I have a harder time of it.

Daddy Daycare

Momma's back to work today so its up to me take care of the little one. We had quite a day.




Lots of diaper changes and naps. We also went to the doctor for our 8 wk checkup and SHOTS!!
I wonder why Mom scheduled this for a Tuesday?
Nathan weighs 12 lbs and is 24.25 inches long. Everything checked out good. He got 3 shots - not his favorite part, but after a couple doses of acetominephen we are feelin OK.
